 I made a mushroom loaf today, basically pureed an onion and some mushrooms in my Magic Bullet, added 12 minced button and 3 portabello mushrooms, assorted spices and 6 heaping tablespoons of whole wheat flour.  I cooked it in the oven at 475 for 20 minutes and then at 250 for 20 minutes, while it's nice and crispy outside it's kind of sticky and ( Read more... )

I've been vegan for nearly four years now and I have yet to make a satisfying vegan meatloaf. Usually they taste pretty good but the texture is so mushy that they don't get eaten.

Since I am the only vegan in the house, this recipe will have to satisfy some omnis too. These omnis are very open to tofu and fake meats but not so much to vegetables. ( Read more... )

There used to be a recipe section on the Fantastic World Foods website - there was a great one for veggieloaf made from the sloppy joe mix, but now its gone! does anyone have this recipe? I remember it being pretty basic - just preparing the mix, adding onions and ketchup, and then baking - but I don't now the specifications...
